Instructions:

  1. Prepare the Pan: Grease a square or rectangular tray or plate with ghee and set aside.

  2. Roast the Besan: In a heavy-bottomed pan, heat about 2 tablespoons of ghee on medium heat. Add the gram flour (besan) and roast it gently, stirring continuously for 3-4 minutes until it releases a nutty aroma. Make sure it doesn't brown.

  3. Prepare Sugar Syrup: In another pan, add sugar and water. Stir to dissolve the sugar, and cook it on medium heat. Once it reaches a single thread consistency (when a drop of syrup between your fingers forms a thread), remove it from the heat.

  4. Add Ghee and Syrup to the Besan: Slowly pour in the hot sugar syrup into the roasted besan mixture while stirring continuously to avoid lumps. Then, add the remaining ghee in small portions, stirring constantly.

  5. Cook the Mixture: Keep cooking the mixture on low to medium heat while stirring continuously until it thickens and starts to come away from the sides of the pan. This will take around 10-15 minutes.

  6. Add Cardamom (Optional): Once the mixture is almost ready, add a pinch of cardamom powder for a fragrant aroma (optional). You can also add crushed cashew nuts at this stage if you like.
