🥩 Andhra-Style Mutton Pickle (Gosht Achar)

Ingredients:

  • 500 grams boneless mutton, cut into small pieces

  • 2 tablespoons ginger-garlic paste

  • 1 tablespoon red chili powder

  • 1 tablespoon turmeric powder

  • 1 tablespoon mustard powder

  • 1 tablespoon cumin powder

  • 1 tablespoon garam masala

  • 1 tablespoon lemon juice

  • 1/4 cup vinegar

  • Salt to taste

  • 1/2 cup mustard oil

  • 5-6 dried red chilies

  • 1 teaspoon mustard seeds

  • 1 teaspoon fenugreek seeds

  • 1 teaspoon cumin seeds

  • 1 teaspoon nigella seeds (kalonji)

  • 1 teaspoon fennel seeds (saunf)

  • 2 bay leaves

  • 5-6 cloves garlic, sliced

  • 1/2 cup curry leaves 

  1. Marinate the Mutton:

    • In a bowl, combine the mutton pieces with ginger-garlic paste, red chili powder, turmeric powder, mustard powder, cumin powder, garam masala, lemon juice, and salt.

    • Mix well, cover, and let it marinate in the refrigerator for at least 2 hours.

  2. Cook the Mutton:

    • Heat 1/4 cup mustard oil in a pan over medium heat.

    • Add the marinated mutton pieces and cook until the meat is tender and the oil starts to separate.

    • Add vinegar and cook for an additional 5 minutes.

    • Remove from heat and set aside to cool.

  3. Prepare the Tempering:

    • In a separate pan, heat the remaining 1/4 cup mustard oil.

    • Add dried red chilies, mustard seeds, fenugreek seeds, cumin seeds, nigella seeds, fennel seeds, bay leaves, and sliced garlic.

    • Sauté until the spices release their aroma and the garlic turns golden brown.

    • Add curry leaves and sauté for another minute.

  4. Combine and Store:

    • Add the cooked mutton mixture to the pan with the tempering.

    • Mix thoroughly, ensuring the mutton is well coated with the spices.

    • Cook for an additional 5 minutes to allow the flavors to meld.

    • Remove from heat and let it cool completely.

    • Transfer the pickle to a sterilized glass jar.

    • Store in the refrigerator and allow it to mature for at least 2 days before consuming.
